Whether you want to eat healthier or are just looking for ways to cut down your grocery budget, plant-based eating is a great solution. We put together this elegant three-course menu to help inspire you to treat yourself to something that’s as delicious as it is nutritious. All of these recipes are from noted London chef Yotam Ottolenghi, the genius behind Ottolenghi and Nopi.

You can cook for yourself and count on plenty of leftovers, or make an occasion of it and use this menu as the foundation for a dinner party. Two of the three dishes can be made ahead of time, and the imam bayildi especially is even more delectable after it has had a day to set in the refrigerator. Happy cooking!

Starter: Gingery beetroot with peanut dressing

This refreshing beet salad packs a punch! Although you will need to wait to assemble it, you can save yourself some time by roasting and marinating the beets the night before.

If you’re not able to source maple syrup where you live, honey is a perfectly acceptable substitute. Regular sesame seeds are also a fine swap for the black variety.

Main course: Imam bayildi

This rich eggplant-based dish is a classic Turkish recipe. The name literally means “the imam fainted”, because legend has it that the original taste-tester fainted with pleasure.

It’s better to use several smaller eggplants for this recipe, rather than one large one as you might if you were roasting the vegetable. Don’t forget to use a plate or the lid of a pot to weigh the sliced eggplant down while it soaks!

Ottolenghi suggests serving the imam bayildi with Greek yogurt and soft, white Turkish-style bread.

Dessert: Ginger and pecan brittle

This sweet, nutty confection is almost as much fun to make as it is to eat. Just be sure you leave enough time for the brittle to set!

Ottolenghi suggests serving the ginger and pecan brittle with ice cream. This recipe calls for flaked salt, but if you have truffle salt it adds a smoky complexity.

If you’re having a party you shouldn’t count on having any leftover ginger and pecan brittle. However, if you do have some to spare it’s worth noting that you can store it at room temperature for up to a week and refrigerated for a whole month.
